In the center of Canal, a town 15 km north of Alba, pastry Saccheri has a history nearly two decades based on experience and tradition. The main product is "The Duchess" a fine pastry whose recipe has been handed down orally and only with the direct assistance of the custodians, which originates from the imagination of Joseph Gallarate, enterprising "canales" to grasp the secrets of this exotic recipe during his stay in the French Riviera. That secret is guarded by 1998 by pastry chef Joseph Saccheri that alongside "The Duchess" a multitude of delicious sweet and savory pastry.
